Hi all, 

Today, I joined resident Marks and Spencer resident chef, Chris Baber on a Sparks Live cook-a-long virtual event. There were a handful of other foodies who joined from around the world.

That was my first ever attempt at making tacos and it was time well spent plus the tacos were really delicious. I like spicy food, so I added diced fresh habanero peppers to my salsa( Chris encouraged us to make the recipe ours lol!). 

I am not ashamed to say that this was also my first time of using fresh coriander leaves in a dish. Oh, the fragrant  aroma of the leaves made my taste buds water and eager to taste the salsa. 

The entire preparation and cooking took less than an hour, but the tacos were really delicious.

The ingredients and method of preparation? Hmm, Chef Chris Baber/ M&S have the trademark!

I learnt a few tips:

  • Unfiltered extra cold pressed virgin oil is best used as a dressing
  • When making guacamole, use 3 parts of oil: 1 part of acidic content
  • You can readily make enchiladas from tacos
  • M &S plant kitchen no-meat mince is a substitute for minced beef
  • To reduce your carb intake, use crisp lettuce cups instead of tacos
